Dato che mi piace tantissimo qui di seguito qualche spiegazione sul RADICCHIO ROSSO di Treviso, un erba speciale , che si adatta a tantissimi piatti o semplicemente mangiato crudo in insalata .

Since I love it very much , I thought it would have been nice to give you some details(just a few) about an italian salad , the RADICCHIO ROSSO di Treviso , something really special in my opinion, tasteful and excellent for a large veriety of dishes or simply in a fresh salad.
Below my recipe for a RISOTTO with Radiccio Rosso.

Radicchio Rosso di Treviso Tardivo IGP, è pronto in Novembre dopo almeno due brinate .Gusto delicato e croccantezza .
Late Red Radicchio of Treviso, Italy(IGP) . It is called "late" cause it is collected when it has matured through the first 2 frosts namely in November . Delicate taste , lightly crunchy .
Radicchio Rouge de Treviso , Italie , type tardif parce que pret à Novembre aprés au moins 2 gélées. Goût délicat et croquant.
Radicchio variegato di Castelfranco IGP- colore bianco-crema con sfumature verde chiaro e piccole punteggiature rosso-violaceo . Foglia tenera dal gusto leggermente amarognolo.

Radicchio Rosso di Treviso IGP Precoce - produzione che segue l'estate dopo che le foglie raggruppate e legate iniziano la trasformazione del colore in rosso . Foglia croccante dal gusto un poco amarognolo.Credo che sia quello che più si adatta a tutte le ricette sia crudo che cotto che alla griglia .
The Radicchio rosso "precoce"of Treviso (IGP) is the first to be gathered after Summer , when the leaves all tied together start turning into colour red .It is leafy and slender with a crisp crunchy leaf with a light bitter taste : I think this is the type of radicchio to use for all receipes : raw , cooked and grilled .
Le Radicchio rosso "précoce" IGP de Treviso, Italie est les 1er à etre collectionné après l'Eté et aprés que toutes ses feuilles ont été groupées et liées ensemble et elles sont denebues rouges.
Feuilles croquantes avec le saveur un peu amer. Je crois que celui-ci c'est le genre de Radicchio parfait pour toutes recettes , soit cru que cuit que grillé.
RISOTTO AL RADICCHIO ROSSO
Per 6 persone - Tempo di preparazione : 30 minuti- Facile
400g Riso (Arborio, Carnaroli,..)
1 1/2 lt brodo vegetale
1 grosso cespo di Radicchio trevisano
1 Scalogno
1 Bicchiere di vino bianco secco
60g burro
50g di Parmigiano -Reggiano grattugiato
Olio extra vergine d'oliva
Sale - Pepe
1. Pulire la trevisana eliminando la base del gambo, lavare le foglie, sgocciolarle bene e tagliarle a striscioline.
2. Tritare finemente lo scalogno e farlo appassire in una pentola capace con 3 cucchiai d'olio.Unire il riso, tostarlo a fuoco vivo
ed irrorarlo con con il bicchiere di vino bianco. Appena il vino sarà evaporato, proseguire la cottura del risotto mescolando
ed unendo, poco alla volta, il brodo. IMPORTANTE :aggiungere un cucchiaio di brodo solo dopo che il precedente si è ben
assorbito.
3. Dopo circa 7-8 minuti (a metà cottura) circa, unire le striscioline di trevisana , salate e pepate . Mescolare bene ed amalgamare
il riso e il radicchio.
4. Continuate a mescolare finendo tutto il brodo e dopo circa 8 minuti (da quando avete aggiunto la trevisana), toglietelo dal fuoco
ed aggiungetevi 60g di burro per mantecarlo. Mescolate fino a che il burro si è ben sciolto e diluito nel riso.
Aggiungete quindi il parmigiano grattugiato , mescolate bene , fate riposare per un paio di minuti e servirlo.

RISOTTO AL RADICCHIO ROSSO
SERVING 6 - PREPARATION TIME : 30' - EASY
400g Rice (arborio, Carnaroli, round big grains)
1 1/2 lt vegetable broth(stock)
1 large clump of radicchio di Treviso
1 Schallot
1 Gladd of dry white wine
60g butter
50g grated Parmesan cheese
Extra virgin olive oil
Sal- Papper
1. Clean the chicory eliminating the base of the stem , wash the elaves , drain well and cut them into strips.
2. Chop the shallot finely and gently brown it in a saucepan with 3 tablespoons of olive oil.
Add the (raw) rice and toast it over high heat, spray it with a glass of white wine . As soon as the wine has evaporated ,
continue cooking the risotto, stirring well and adding , little by little, the broth. IMPORTANT : add a cup of broth only after the
previous one is well absorbed.
3. After 7-8 minutes (about halfway of cooking) add the radicchio stripes , salt and pepper them . Stir the whole well and slowly .
4. Keep stirring finishing all the broth (the risotto must result "creamy" not dry) after about 8 minutes (since you have add the
green), remove the rice from heat , add 60 g of butter and stir it until the butter is completely melted . Add 50g of Parmesan
cheese grated (possibly, the original one!!) , mix well and let the rice rest for a couple of minutes, then serve it.

RISOTTO AU RADICCHIO ROUGE DE TREVISO
400g de Riz (Carnaroli, Arborio, riz à grains ronds)
1 1/2 lt de bouillon végétal
1 Echalote
1 verre de vin blanc sec
60g beurre
50g Parmesan rapé
Huile extra vierge d'olive
Sel - Poivre
1. Nettoyer les chicons de radicchio , eliminer la base de la tige, laver les feuilles bien , les égoutter et les couper en
lanières.
2. Hacher l'èchalote finement dans une casserole avec 3 cuillères à soupe d'huile d'olive et les laisser ramollir .
Unir le riz et le passer sur feu vif , le vaporiser avec le verre de vin blanc. Dés que le vin se soit évaporé, continuer
à cuire le risotto en remouant et en ajoutant , peu à peu, le bouillon . IMPORTANT : ajouter une cuillère à soupe de
bouillon à la fois et seulement après la précedente est bien absorbée.
3. Aprés 7-8 minuts, environ a mi-cuisson- ajouter le radicchio , du sel et du poivre. Melanger bien toujours lentement
tout.
4. Remuer en ajoutant peu ù la fois tout le bouillon (le risotto doit etre crémeux et après environ 8 minutes (depuis que
vous avez ajouté le radicchio) , retirer la casserole du feu et incorporer 60g de beurre .
Remuer jusqu'à quand le beurre sit complètement fondu et dilué dans le riz . Puis, ajouter le parmesan rapé , mélanger
bien tout , laisser reposer le rix pour 2 minutes et servir.
